Cabernet Sauvignon is a premium, 100% natural red grape juice concentrate made from healthy, hand-selected grapes. This viscous liquid retains the essence of unfermented fresh grape juice and is produced without any added flavorings, colorings, or preservatives. Using advanced evaporator technology, the water is carefully removed to deliver a pure and concentrated product ideal for various food and beverage applications.

Technical Specifications and Composition

This Cabernet Sauvignon concentrate features a Brix level of 67-69 at 20°C and a total acidity of 1.0-2.1% tartaric acid by weight. The pH level ranges from 2.8 to 3.8, with a color intensity of 400-800 at 520 nm, ensuring vibrant color and high quality. The turbidity is kept under 100 NTU at 16º Brix, while the total sulfur dioxide content is less than 10 mg/kg, ensuring a product that meets stringent quality standards.

Microbial Safety and Purity

To ensure the highest level of purity and safety, this Cabernet Sauvignon concentrate undergoes rigorous microbiological testing. Yeast, mold, and total plate counts (TPC) are consistently kept below 10 UFC/g, and the product is free from coliforms and thermo acidophilic bacteria (TAB). These strict quality controls ensure that the product remains safe and stable, suitable for a wide range of food and beverage formulations.
