Malbec Product Overview

Malbec is a 100% natural red grape juice concentrate produced from carefully selected, healthy grapes. This viscous red liquid is created without any added flavorings, colorings, or preservatives, preserving the authentic character of unfermented fresh grape juice. Utilizing the latest evaporator technology, water is removed to deliver a pure, concentrated product ideal for use in various food and beverage applications.

Technical Composition and Quality

Malbec juice concentrate features a Brix level of 67-69 at 20°C and a total acidity of 1.0-2.1% tartaric acid by weight. The pH ranges from 2.8 to 3.8, and the color intensity measures between 400-800 at 520 nm, ensuring a deep, vibrant color. With turbidity maintained at less than 100 NTU at 16º Brix and total sulfur dioxide levels below 50 mg/kg, the product meets high standards of purity and quality.

Microbial Safety and Quality Control

To ensure the utmost safety and stability, Malbec undergoes strict microbiological testing. Yeast, mold, and total plate counts (TPC) are all kept below 10 UFC/g, while the product is entirely free from coliforms and thermo acidophilic bacteria (TAB). These stringent controls ensure that the product remains safe for consumption and suitable for a variety of high-quality food and beverage products.
