Merlot is a 100% natural red grape juice concentrate crafted from healthy, hand-selected grapes. This viscous red liquid is free from any added flavorings, colorings, or preservatives, offering an authentic, unfermented grape juice experience. Using advanced evaporator technology, the water is carefully removed to maintain the product's pure concentration, making it ideal for use in a wide range of food and beverage products.

Quality and Composition

Merlot concentrate boasts a Brix level of 67-69 at 20°C and a total acidity of 1.0-2.1% tartaric acid by weight. Its pH level ranges from 2.8 to 3.8, and the color intensity is measured between 400-800 at 520 nm, delivering a rich and vibrant hue. With turbidity kept under 150 NTU at 16º Brix and total sulfur dioxide content below 50 mg/kg, Merlot meets stringent quality standards for purity and safety.

Microbial Safety and Purity

Merlot undergoes comprehensive microbiological testing to ensure the highest level of safety and quality. Yeast, mold, and total plate counts (TPC) are all maintained at less than 10 UFC/g, while the product is free from coliform bacteria and thermo acidophilic bacteria (TAB).
